Carrot Salad

I’m not a nutritionist however, I am a foodie! I LOVE food, food loves me. Whole real food is one of my medicines and today we bring you a delicious Carrot Salad recipe that I have personally tested.
Carrot sticks, although convenient, can become monotonous after a while. This here is an easy, tasty, colorful alternative to dressing up your carrots. If time is not abundant in your schedule, double or triple the recipe. It keeps well in the refrigerator throughout the week. You can eat it as a snack, precursor to a meal, or as a topping.
Carrot Salad Raw
INGREDIENTS
3 Cups Carrots Grated
1/2 Cup Cilantro Chopped
1 Tbsp Peanuts Crushed (optional)
3 Tbsp+ Olive Oil, or Coconut Oil3 Tbsp Apple Cider Vinegar
Juice from half a Lemon
Salt to taste
STEP 1: TOSS carrots, cilantro, and peanuts in large bowl.
STEP 2: MIX oil, apple cider vinegar, lemon and salt in small bowl. Taste.
STEP 3: COVER and MIX all ingredients in one bowl really well to get full coverage.
STEP 4: Taste gets even better the longer it sits.
