Carrot Salad

Look no further for the perfect summer BBQ recipe! I’m not a nutritionist however, I am a foodie! I LOVE food, food loves me. Whole real food is one of my medicines and today we bring you a delicious Carrot Salad recipe that I have personally tested. Carrot sticks, although convenient, can become monotonous after a while. This here is an easy, tasty, colorful alternative to dressing up your carrots. If time is not abundant in your schedule, double or triple the recipe. It keeps well in the refrigerator throughout the week. You can eat it as a snack, precursor to a meal, or as a topping. Carrot Salad RawINGREDIENTS 3 Cups   Carrots Grated1/2 Cup  Cilantro Chopped1 Tbsp    Peanuts Crushed (optional)3 Tbsp+   Olive Oil, or Coconut Oil3 Tbsp   Apple Cider VinegarJuice from half a LemonSalt to taste STEP 1: TOSS carrots, cilantro, and peanuts in large bowl.STEP 2: MIX oil, apple cider vinegar, lemon and salt in small bowl. Pearls of Wisdom

Hello there! Home and settled-in after my honeymoon in Morocco, we recently celebrated our three-month wedding anniversary and now in the groove of creating 2019. Morocco was an incredible adventure—I’m processing so many pearls of wisdom from this odyssey that I could string together an impressive necklace. We journeyed through many flavors, colors, microclimates, agricultural regions, mountains, rivers, oases, deserts, and beaches. We forged friendships with hospitable Amazigh (Berber) families, and drank herbal tea with nomads in their tidy winter tent on a basalt desert plain; life seems so simple there. Existing here in NYC seems complex with our many varieties, diversions, distractions, and choices. It is in the eye of the beholder with regard to right, wrong, or an even keel, regardless of a locale. One of the things that I love about travel is when I have the privilege to observe how other cultures thrive; these experiences expand my perspective on how we are living. All this inspires me to share four impactful questions that a teacher once shared with me many years ago— As we create 2019 and consider the choices in all areas of our lives, keep these four questions handy to simplify and keep on track:  Is this something that I want to be, do, or have? Y/NIs being, doing, or having this going to bring me closer to where I want to be? Y/NIs being, doing, or having this in harmony with the laws of the universe? Y/N Is being, doing, or having this going to violate the rights of others?  Y/N  If answers 1-3 are a YES, and 4 a NO—you’re on, GO FOR IT! If any answers 1-3 are a NO, and/or 4 a Yes—PAUSE. Breathe. Check in with your values. Reconsider the possibility that there is another way. May this tool support you in staying on track in the world around you. With much love,Nicole​​
